‘NFL’ star Xavier Legette spills the beans on his Raccoon recipe


Guy Fieri is trying to get his hands on Xavier Legette’s special Raccoon recipe.
The Panthers wide receiver initiated the conversation about his dish when chatting with Food Network star Fieri this weekend.
In a clip posted by the NFL on Sunday, Fieri replied that he was “just having a raccoon cooking conversation the other day” with a friend.
“A buddy of mine swears he is the raccoon chef,” the Diners, Drive-Ins, and Dives host told Legette.
“No, really, he was giving me a whole rundown on it, so I would be down with it. My motto is — we’re both hunters — and our motto is, if you’re going to hunt it, you got to eat it.”
Fieri then asked Legette if he was a “raccoon chef” and what marinade he uses on the uncommon meat.
“We got a little secret, and I can’t give it to everybody,” the football player replied.
“You can’t give me the secret? We share as chefs,” Fieri insisted.
“I can’t give you the secret because there’s some down in the bottom in South Carolina type of cooking,” Legette explained.
Eventually, the Panthers star gave in, sharing that he places the raccoon in a pressure cooker, lets the meat fall off the bone, puts it in the oven, chops it up, and then seasons it with cracked pepper.
“It’s good eating,” he assured Fieri.
“But you’re not going to kick down on that raccoon recipe?” Fieri asked, to which Legette replied, “We’ll talk about it off camera.”
Legette first opened up about being fond of eating raccoon in a December episode of the St. Brown Brothers Podcast.
“I eat raccoon,” Legette replied when asked about his “hottest food take” or “something weird he likes to eat.”
“Like the raccoon you see in the trash can,” Legette clarified, going on to say, “I hunt it, I kill it, I skin it, cook ‘em, eat ‘em. All of that.”
Legette revealed that the last time he’d enjoyed a raccoon was Thanksgiving.
“All my people do hunting and all that,” Legette explained. “My cousin is the one that killed it, and came and was like, ‘Come on, we got the raccoon.’ ”
Later that month, Legette revealed that he’d also eaten the meat on Christmas day.
